First time Italy recommendations for small towns

My partner and I are planning to travel to Italy next spring or fall for about 2 weeks. I am fairly well travelled (20+ countries) but this is our first trip to Italy. I am not interested in seeing main destinations like Venice, Rome, Florence, Cinque Terre. My partner said he would like to visit Amalfi coast. I don’t mind skipping this town but since we are planning to go during shoulder seasons, hoping it will be less touristy. Our main preferences are exploring a small town leisurely enjoying the food and nice scenery. Don’t care about covering as many cities as possible. Any recommendations for Italian towns in the spurts preferably.
